Chocolate Bread by Paula Deen/Food Network

I needed something to take to a friend’s house as a Housewarming gift and also to another friend’s house as a Moving Away gift. Yes, odd coincidence.

So I settled on giving this recipe a try because it made two loaves, was made all in one bowl, I had all of the ingredients and let’s face it…you cannot go wrong with chocolate, even if someone doesn’t like chocolate. I tweaked the recipe a bit, (a hobby of mine), and my kids and I had a half a loaf gone in minutes just from our taste test! It was so yummy.

Here are my tweaks:
-Coconut milk in place of regular milk (I happened to have quite a bit of coconut milk on hand from smoothie making)
-Added a cup of coconut to the batter
-Cut the sugar to 1 3/4 cup (1 cup regular sugar, 3/4 cup confectioners sugar)
-Added toasted nuts, probably about 1 1/2 cup
Suggestion for next time, cut cocoa powder to 1/2 cup since I like less chocolate intenseness

Thinking of making real whipped cream to dollop with some fresh strawberries…mmmmmmmmmmm

      It is sooo good and sooo easy, which makes it even tastier! The coconut milk was a lucky ingredient to have on hand and it went well with my addition of coconut. If you make the recipe you will have to let me know what you think!
